      Nitrate's most serious risk is to infants: high levels cause methemoglobinemia, or 'blue-baby syndrome,' in which nitrate interferes with the blood's ability to carry oxygen — potentially life-threatening for babies under six months fed formula made with contaminated water. The EPA therefore sets a strict Maximum Contaminant Level of 10 milligrams per liter (mg/L) of nitrate as nitrogen. In adults, chronic exposure has been associated in some studies with certain cancers and thyroid effects. Nitrate contamination is overwhelmingly agricultural and wastewater-driven: nitrogen fertilizer leaching into groundwater, animal manure from feedlots, and septic systems and leaking sewage infrastructure. Rural homes on private wells near farmland or with their own septic systems see the highest levels, and because nitrate moves easily through soil, wells in heavily farmed regions are especially at risk. Nitrate is colorless, odorless and tasteless, so testing is the only way to confirm it — and dangerously, boiling concentrates it rather than removing it.
